Crisped Out Peaches
6 Servings 6-6oz ramekins

Filling
5 each large ripe fresh peaches, pitted, peeled and cut into chunks
1 each lemon, zested and juiced
¼ cup tightly packed brown sugar
2 Tbs honey
½ tsp vanilla
1 Tbs basil, fresh chopped
pinch kosher salt
Topping
1 ¼ cup flour
½ cup rolled oats
½ cup brown sugar
½ cup sugar
1 ¼ stick cold butter, cut into pieces
½ cup pecan pieces, toasted
Heaps VANILLA ICE CREAM
Directions
Pre heat oven to 350.
Filling
Toss the peaches in a large bowl with the zest and the lemon juice,
add the rest of the ingredients and stir to combine.
Portion the filling evenly between the ramekins.
Topping
Combine all the ingredients in a food processor. Pulse until combined and crumbly
Top each ramekin with the topping
Place the ramekins on a sheet pan and bake for 20-25 minutes or until topping is bubbly, crispy hot. Top with ice cream
