Grilled Vidalia Onions

Serves 4
4 Vidalia onions, peeled
4 pats butter
4 slices bacon, halved
Recipe
Remove a thin slice from top and bottom of onion. Make four cuts from top towards bottom half way through (essentially quartering the onion); sprinkle with salt and pepper. Place pat of butter in center; crisscross bacon over top. Complete with remaining onions. Wrap each in heavy aluminum foil. Over medium, indirect heat, cook onions approximately 45 minutes. Slice and serve.
