2 T low-sodium chicken broth
3 T finely chopped shallots or onions
2 T flour
1 c skim milk, scalded and hot
1 t cinnamon
1 c cooked, pureed carrots
1 c low-sodium chicken broth
ground pepper
Recipe
Heat the broth in a stockpot over medium heat. Add shallots and
cook until they are limp. Sprinkle shallots with flour and cook
2 to 3 minutes. Pour in the hot milk and cook until mixture
thickens. Add remaining ingredients. Bring almost to a boil,
stirring often. Add pepper to taste. Makes 4 servings.
