    Egg and Broccoli Casserole

    List of Ingredients

    - 2 pkgs (10-oz each) frozen chopped broccoli, cooked, drained
    - 4 hard-cooked eggs, peeled, thinly sliced
    - 1 cup fat-free sour cream
    - 1/2 cup fat-free mayonnaise
    - 2 tablespoons tarragon vinegar
    .. . . OR white wine vinegar and 1/2 tbsp dried tarragon leaves
    - 1/4 teaspoon paprika




    Recipe

    Arrange broccoli in lightly greased 13x9-inch baking dish.
    Top with egg slices. Combine sour cream, mayonnaise, and
    vinegar in small saucepan. Heat over low heat, stirring
    constantly until warm, about 4 minutes. Pour over broccoli
    and eggs; sprinkle with paprika. Bake, uncovered, at
    325 degrees F. 15 to 20 minutes.
