    Fresh Spinach and Strawberry Salad

    List of Ingredients

    Dressing
    3 T red wine vinegar
    3 T sparkling mineral water
    3 T canola oil
    1 t poppy seeds
    1/4 t Worcestershire sauce
    1/4 t paprika

    Salad
    1 lb spinach,
    1 sm red onion, 3 ounces (90 g), thinly sliced
    2 oz fresh bean sprouts, rinsed and drained
    12 fresh strawberries, hulled and sliced


    Recipe

    In a small bowl, whisk together the dressing ingredients until
    well combined. Rinse, remove tough stems/leaves and tear spinach
    into bite-size pieces then place in a large salad bowl. Add
    onion and bean sprouts and toss. Drizzle with dressing and toss
    to evenly coat. Arrange salads on individual plates and top each
    serving with some of the sliced berries. Makes 6 servings.

    Nutritional information: 95 calories, 7 g fat, 3 g protein,
    7 g carbohydrates, no cholesterol, 64 mg sodium, 3 g fiber.
