Diabetic Pork Medallions With Balsamic Orange Glaze
3 tablespoons flour
2 tablespoons brown sugar, divided
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/8 teaspoon cayenne
1 pound pork tenderloin cut on the diagonal into 12 pieces
1 tablespoon olive oil
3 tablespoons balsamic vinegar
1/4 cup orange juice
Recipe
Combine flour, 1 tablespoon sugar, salt, cumin and cayenne on a plate.
Dredge the pieces of pork in the mixture.
Heat olive oil in a large nonstick skillet over medium high.
Add pork and cook 2 to 3 minutes on each side, or until nearly cooked
through.
(The pork should be light pink in the center.)
Transfer the medallions to a plate.
Pour vinegar, orange juice and remaining 1 tablespoon of brown sugar
into
pan.
Cook, stirring and scraping up the bits on the bottom of the pan,
about 3
minutes, or until liquid is thickened.
Return pork to skillet, turn cutlets once to coat them in the glaze
and
serve immediately.
Makes 4 servings.
