    Rice Bars with Chocolate Chips

    List of Ingredients



    ¼ c. cold water 60 ml
    1 env. unflavored gelatin 1 env.
    1 T. granulated fructose 15 ml
    1 T. granulated sugar replacement 15 ml
    2 T. margarine 30 ml
    1 egg white 1
    6 c. crisp rice cereal 1500 ml
    ½ c. mini chocolate chips 125 ml


    Recipe


    In a microwavable bowl or saucepan, sprinkle the gelatin over the cold water; then allow the
    gelatin to soften for 5 minutes. Heat until gelatin is completely dissolved. Remove from heat.
    Add fructose, sugar replacement, and margarine. Stir to dissolve fructose and melt margarine.
    Allow mixture to cool to a thick syrup. Beat egg white to soft peaks. Continue beating the egg
    white, and pour the gelatin mixture in a thin stream into it. (Mixture will not fluff up.) Place rice
    cereal in a large bowl. Thoroughly fold egg white-gelatin mixture into cereal. Fold in chocolate
    chips. Transfer to a lightly greased 13 x 9 in. (33 x 23 cm) cake pan. Cool. Cut into 24 bars.

    Yield: 24 bars Exchange, 1 bar: 1/3 bread Calories, 1 bar: 23 Carbohydrates, 1 bar: 4 g
