    DIABETIC ITALIAN BEAN SALAD

    - 2 (15 ounce) cans white beans, drained
    - 1 small red onion, minced
    - 3 stalks celery, diagonally sliced
    - 1/4 cup sliced scallions
    - 1/2 cup minced parsley
    - 2 tablespoons balsamic vinegar
    - 1 tablespoon olive oil
    - Fresh ground pepper to taste

    Recipe



    Combine all ingredients in the order given. Add more balsamic
    vinegar if desired. Refrigerate until ready to serve.

    Yield: 6 servings
