Low Calorie Chicken Salad
2 lbs chicken breast (skinless and boneless)
1 large Granny Smith apple (diced)
3 cups seedless grapes, chopped
3 tbsp lemon juice
1 tbsp light mayonnaise
1/2 cup fat free sour cream
1/4 cup fat free plain yogurt
2 Tbsp Balsamic Vinagrette salad dressing
Salt
Pepper
Poultry Seasoning
2 cups chicken broth
Directions
Poach chicken breasts in broth and seasoning for about 15 minutes.
Put chicken through food processor.
Chop green apple and toss in 1 tbsp lemon juice.
Chop grapes and add to apples.
In small bowl combine sour cream, yogurt, mayo, lemon juice and Balsamic dressing. Whisk ingredients together.
Add dressing mixture to chicken and blend.
Add apple and grape mixture to chicken and blend.
Season to taste.
