    Ingredients

    2 1/2 c. whole wheat bread cubes (stale is fine!)
    1/1/4 c. warm milk
    1/4 c. sugar
    1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    1/2 tsp. vanilla
    1/2 c. egg substitute
    *You may add raisins and nuts if you wish, but it will alter the nutritional information listed here.



    Directions
    Grease 1-quart casserole. In greased casserole, combine bread cubes and milk. In medium bowl, combine sugar, cinnamon, nutmeg, vanilla, and eggs; mix well. Stir egg mixture into the bread cube mixture. Bake at 350 degrees for 50 minutes or until the pudding is set. (If you choose to double the recipe, use two 1 quart casserole dishes instead of a large one.) Makes 8 1/2 c. servings.
