    LOW CHOLESTEROL MACARONI AND CHEESE

    8 oz. pkg. Creamettes (low chol./low salt) macaroni
    Boiling water
    Lite salt (to taste)
    2 tbsp. low chol. butter
    3 tbsp. flour
    Dash of pepper (to taste)
    2 c. 1% or 2% milk
    2 c. grated low fat/low chol. cheese (Suggestion - Alpine Lace American - DELICIOUS)

    1. Boil macaroni in salted water, according to package.

    2. Drain macaroni.

    3. Set oven at 375 degrees.

    4. Melt butter in saucepan.

    5. Add flour, mix until smooth.

    6. Add milk. Stir constantly until smooth and thick.

    7. Add cheese, add additional salt (if desired) and pepper.

    8. After mixture is thick and smooth, add cooked macaroni and mix thoroughly.

    9. Pour into greased 2 quart casserole dish. (Make sure you use low cholesterol oil), OR spray with PAM.

    10. Top with slices of low cholesterol cheese.

    11. Bake in oven covered for 15 or 20 minutes.

    12. Remove from oven and take off aluminum foil or lid and bake for another 15 minutes or until golden brown. Makes about 8 to 10 servings.
