    Ingredients

    4 8-oz packages neufchatel cream cheese
    1 cup Splenda sugar substitute for baking
    1 6-oz package light vanilla yogurt
    3 tbsp oat flour (or other whole grain flour)
    3/4 cup egg whites or egg substitute
    1 tsp vanilla extract
    1/2 cup Kashi Go Lean cereal



    Directions
    1) Preheat oven to 325 degrees F.
    2) Lightly coat the inside of a 9" springform pan with cooking spray (canoloa oil).
    3) Crush the Go Lean cereal, and evenly sprinkle it on the bottom of the springform pan.
    4) In a large bowl, mix the Splenda, cream cheese, flour, vanilla and yogurt at medium speed until thoroughly mixed.
    5) Add the egg whites while mixing at low spend just until blended.
    6) Pour the batter over the cereal crumbs in the springform pan.
    7) Bake for 60-70 minutes, or until the center is almost set.
    8) Cool to room temperature, and then refrigerate for at least four hours.
    9) Serve chilled. Fruit toppings may be added, if desired.
    Serves 12.
