    Ingredients

    3 T. olive oil
    garlic
    1 bag frozen spinach (10 oz.)
    3 cups cooked brown rice
    1 cup Better n Eggs
    1/2 cup skim milk
    1 tsp. salt
    1 tsp. pepper
    4 oz. part skim shredded mozzarella
    4 T. parmesan

    Saute garlic in olive oil, mix in rice and spinach. Pour in egg whites, seasoning, and mix with cheese. Pour into sprayed 9 x 13 pan and bake at 350 degree oven for 30 minutes. Cut into 12 servings.
