Low Fat Black Beans and Rice

1 t olive oil
1 med chopped onion
2 clv garlic, minced
3/4 c short-grain white rice
1 1/2 c low-fat low-sodium chicken broth
1 t cumin
1/4 t cayenne pepper
3 1/2 c black beans - drained
Recipe
In a stockpot over medium-high heat, heat the oil. Add the onion
and garlic and saute for 4 minutes. Add the rice and saute for 2
minutes. Add the chicken broth, bring to a boil, cover and lower
the heat and cook for 20 minutes. Add the spices and black
beans. Makes 6 servings.
