    Low Fat Roasted Szechwan Pepper-Salt

    1/4 c Szechwan brown peppercorns
    1/2 c coarse kosher salt*
    1/2 t whole black peppercorns

    Recipe



    Combine salt and peppercorns in dry, heavy skillet. Stir over
    moderate heat until salt turns off-white and pepper is fragrant.
    It will smoke, but don't let it scorch. Process mixture in food
    processor for about 1 minute, then strain it through a fine
    sieve.

    Used as a dipping salt for deep-fried foods.

    *it's very important not to substitute table salt or sea salt for
    this.
