Low Fat Santa Fe Potatoes

4 medium red potatoes
1 tbsp olive oil
1 1/2 cups salsa
1 cup frozen corn
1 can (14 1/2 oz.) black beans, drained and rinsed
1/8 cup chopped fresh cilantro
Recipe
Cut unpeeled potatoes into 1 inch cubes. Put into glass dish, cover
with plastic wrap, and microwave 8 - 10 minutes or until tender. Heat
olive oil in non-stick skillet. Add potatoes. Saute until lightly
browned. Add salsa, corn and beans. Stir carefully so the beans don't
get crushed. Heat through. Sprinkle with cilantro and serve.
Makes 6 servings.
