Low Fat Vanilla Poached Peaches

1 c water
1/2 c sugar
1 vanilla bean, split and scraped
r lrg peaches, pitted and quartered
Recipe
Place water, sugar, vanilla bean and scrapings into saucepan.
Over low heat stir until sugar is dissolved. Continue to simmer
until the mixture is slightly thickened (about 10 minutes). Add
the cut fruit. Poach over low heat for about 5 minutes. Serve
in small decorative bowls with the "sauce." Makes 4 servings.
Optional garnishes: mint leaves or a dusting of cinnamon.
Note: You may also substitute 4 nectarines, 4 apples, 4 small
pears or 8 apricots in place of the peaches.
