Low Fat Vegetable Chowder

1 head broccoli - chopped
3 med stalks celery - sliced thin
1 med onion - chopped
2 lrg russet potatoes - peeled and chopped
2 c water
1 t salt
1 1/4 c vegetable or chicken broth, from bouillon is ok
1/2 c all-purpose flour
2 c nonfat milk
Recipe
Heat broccoli, celery, onion, potatoes, water, salt, and broth to
boiling in Dutch oven; reduce heat. Cover and simmer for 10
minutes. Shake 1 cup of the milk and the flour in tightly covered
container; slowly stir into Dutch oven. Heat to boiling. Boil
and stir 1 minute. Stir in remaining milk. Heat over low heat,
stirring occasionally until potatoes are cooked through. Makes 8
servings.
