    One (10 oz.) pkg. frozen chopped spinach, thawed or 1 lb. fresh
    1 1/2 tsp. olive oil
    2/3 cup chopped onions
    2 cloves garlic, minced
    3 cups cooked orzo
    1/2 tsp. kosher salt
    1/4 tsp. freshly ground pepper
    2 tsp. lemon juice

    Recipe



    Cook the spinach until warmed through (this can be done in the microwave).
    Squeeze out excess water and set aside. Meanwhile, heat the oil in a large
    nonstick skillet. Over med.-high heat, cook the onions and garlic until
    darkened but not brown. Stir in the orzo and cook about 2 min., until golden.
    Stir in the spinach, salt, pepper and lemon juice. Warm through.
