    No Fat Baby Minted Carrots

    1 lb baby carrots
    6 c water
    1/4 c apple juice
    1 T cornstarch
    1/2 T chopped fresh mint leaves
    dash cinnamon

    Recipe



    Scrub carrots. Put 6 cups of water into a large pan. Boil
    carrots until tender crisp; about 10 minutes. Over moderate
    heat, thicken apple juice with cornstarch. Add mint and
    cinnamon. Pour over carrots. Makes 5 servings.

    Nutritional information: 50 calories, no fat, 1 g protein,
    12 g carbohydrates, no cholesterol, 30 mg sodium, 3 g fiber.
