GREEN OMELET
Serves 3 - 4
Approx 6 oz frozen chopped spinach
4 - 5 eggs
approx 3/4 tsp salt
approx 1 1/2 tbs butter or margarine
Recipe
Thaw the spinach on low heat. Beat together eggs and salt, then mix eggs and
thawed spinach. Melt the fat in a saucepan until light brown. Pour in the
egg-spinach batter and stir around, so that loose batter comes down to the
bottom to set. When the omelet is a little creamy, it's done. "Unmold" or
serve straight from the pan with sardines or smoked ham, or just as it is
with a salad. Enjoy!
