    Pot O' Gold Chicken

    Pot O' Gold Chicken
    1/3 cup flour
    2 tsp.. salt
    1/8 tsp. pepper
    1 cut up chicken
    3 Tbl. salad oil
    1 cup juice(from juice packed cling peaches, drained)
    1/2 tsp.. dry mustard
    1/4 cup chopped onion
    1/4 cup orange juice
    1(1 lb. 13 oz.) can cling peaches(I used my own home jarred ones)
    1(10 oz.) package frozen peas

    Combine flour,salt and paper in a paper or plastic bag.
    Shake chicken pieces in flour mixture until well coated.
    Reserve flour mixture.
    Brown chicken in oil in large skillet.
    Blend peach juice with flour mixture and mustard;add onion and orange juice.
    Cook until thick, stirring constantly.
    Pour over chicken;cover and simmer for 30 minutes.
    Add peach slices and peas.
    Cover and simmer 10 minutes longer.
    Serves 6(not in this house!!)
