* 2/3 cup milk
* 1/4 cup white granulated sugar
* 1/4 cup packed brown sugar
* 1 cup cooked mashed pumpkin, home recipe or canned
* 1 tablespoon bread machine yeast
* 1/4 cup butter, softened
* 2 eggs
* 4-5 cups flour
* 2 tablespoons pumpkin pie spice
* 1 teaspoon salt
* 3 tablespoons butter, softened
* 1/2 cup white sugar (may mix 1/2 white 1/2 brown)
* 1 tablespoon cinnamon
* Pumpkin Pie Glaze (see below)
Method:
Heat milk in microwave on high for 1 minute; beat in 1/4-cup brown sugar, 1/4-cup white sugar and pumpkin; add yeast and mix. Beat in butter, eggs, 1 cup flour, 1-tablespoon pumpkin pie spice, and salt. Add 1 1/2-cups flour and beat until smooth and elastic. Stir in by hand 1/2-cup flour; place dough on floured surface and knead in additional flour until dough is soft and smooth, but not sticky. Place in clean greased bowl, cover and allow dough to rise until double in bulk (between 1-2 hours).
Roll dough out on a lightly floured surface into a two 12x10 inch rectangles (or one 24x10 rectangle); spread dough with 3-tablespoons softened butter. Mix together 1/2-cup sugar and cinnamon and sprinkle over dough. Begin on long side and roll dough, pinch edges to seal; cut into 24 1-inch thick slices, place rolls on large parchment paper covered or buttered baking sheet. Cover and allow rolls to rise until nearly double in bulk (30-60 minutes). Preheat oven to 350 degrees, remove wrap from rolls and bake 15-20 minutes. Cool 15-20 minutes then drizzle Pumpkin Pie glaze in mummy fashion. Enjoy with a cold glass of milk.
Notes:
