Mardi Gras Omelet
2-3 eggs per omelet, whipped with 1 TSP cream per omelet. Salt/pepper to taste and add 1-2 TSP of DRY Ranch dressing powder mix to eggs.

Brown favorite pork sausage
Create Mardi Gras confetti with finely diced:
Yellow and green bell pepper
Purple and green onion
Saute' confetti in a little butter until tender.
Stir in ¼ cups Purple Hull Peas.
For spice add some Rotel™ tomatoes to vegetable mixture.
For fun add a fine layer of grated pepper Jack cheese to top omelet.
