    1 1/4 cups sugar
    2 cups water
    1 large egg white
    2/3 cup key lime juice

    Recipe



    Combine sugar and water.
    Bring to a boil, boil 1 minute.
    Remove from heat, set aside.
    In medium bowl, lightly beat egg-white until foamy.
    Add hot sugar syrup, continue beating until slightly cooled.
    Add lime juice and mix well.
    Mixture will have foam on top, but will mix into the sorbet when frozen.
    Refrigerate until cold.
    Freeze according to ice cream freezer instructions.

    Makes about 3 cups
