Meatballs In Potato Cups
2 cs. leftover mashed potatoes
1 egg
1/2 small onion, finely chopped
1 celery stalk, finely chopped
2/3 lbs. lean ground beef
1/2 c. quick cooking oats
1/3 c. nonfat dry milk
1/2 tsp. salt
1/4 tsp. pepper
Bouillon Gravy:
1 tbsp. butter or margarine
2 tbsps. flour
1 c. water
1 tsp. beef bouillon granules
1/2 tsp. bottled browning sauce (opt.)
Recipe
In mixing bowl, combine potatoes and egg.
Using an ice cream scoop, place eight mounds of potato mixture onto a greased
jelly roll pan.
Combine onion, celery, beef, oats, milk, salt and pepper; shape into eight
meatballs, press one meatball halfway into each potato "cup".
Bake at 350 degrees for 35 to 40 minutes or until the meat and potatoes are
browned.
For gravy; melt butter in small saucepan; remove from heat.
Blend in flour.
Stir in water and bouillon.
Add browning sauce.
Cook and stir until smooth and thickened.
Spoon gravy over potato cups and pass the extra gravy.
Makes 4 servings.
