Cilantro Pesto Crowned Pan Fried Steak with Jalapeno American Fries

8-10 oz. filet mignon, flank steak or sirloin
8 oz. Pesto: puree of fresh basil, pine nuts,
olive oil, parmesan, lemon juice
1 bunch cilantro
2 Tbsp. Butter
kosher salt, pepper,
granulated garlic to taste
2 med baked potatoes
1 yellow onion slivered
1 Jalapeño seeded and chopped
Kosher salt
Fresh ground pepper
¼ cup finely shredded Jack cheese
Olive oil
In a well seasoned cast iron skillet, heat olive oil over high heat.
Season steak generously with steak seasoning; place in pan (careful of flame). Sear on each side for 1 minute.
Spoon pesto mixture evenly on four steaks, remove from cast iron and place on baking sheet; bake at 350 degrees for 10 minutes (medium).
In the same cast iron skillet, add olive oil, onions and jalapeno. Sautee until slightly caramelized.
Add another Tsp. olive oil and potatoes evenly covering pan bottom.
Cook about 5-8 minutes stirring with wooden spoon lightly browning potatoes.
Remove from heat, salt and pepper to taste, spread cheese evenly.
