Blueberry beurre blanc:
Sweat 3 medium brunoise shallots until translucent on low-heat, without browning
Add 2 Tablespoons white wine vinegar and 1 cup Chardonnay or other comparable white wine
Add 1 cup fresh blueberries and reduce by half; slow and low…
Turn off heat
Add ¾ cup diced unsalted butter
Mix until mixer is homogenous

Transfer to food processor and blend with:
2 Tbsp. chiffonade mint
5 Tbsp. pistachios
Strain if you prefer smooth sauce

Fillet:
Sear seasoned fillet in 1½ Tbsp. vegetable oil until an internal temperature of 145ºF is reached
