Smoked Salmon Sandwich With fried egg, Chevre, Caper & Radish Salad

1 lb. Smoked Salmon
8 Ciabatta Slices
½ cup Chevre
4 Eggs, 2 Tbsp. Capers
¼ cup Frisee
½ cup Arugula
2 Radishes, ½ Lemon
1 Tbsp. Olive Oil
1 Tbsp. Red Onion, thinly sliced
Salt & pepper
Procedure-
Split open ciabatta and toast in 400 degree oven.
Crack eggs in sauté pan and cook over hard.
Spread chevre on top and bottom of toasted ciabatta.
Split salmon between 4 bottom buns.
Top salmon with fried egg.
Toss capers with frisee, arugula, onion, radish, lemon juice, and olive oil.
Season with salt and pepper.
Place dressed salad on top of fried egg.
Top with top of bun and serve.
Makes 4 sandwiches
