12 sliced bacon
1 bell pepper
½ sweet onion diced
1 Jalapeño peppers
1 pkg. Jimmy Dean Sausage
8 oz pkg. cream cheese, sliced
Layout 6 pieces of bacon in a row
Lay one piece of bacon in the middle of the rows you just made but in opposite direction
Now left up ever other piece , place another piece of bacon in to form a weave of bacon
Place the sausage in a one gallon bag and spread out to cover the whole inside of the bag
Cut out two sides of the bag to remove the sausage and lay on top of the weaved bacon
Place the cream, cheese, onions and jalapenos over the sausage but leave at least 1/2" off the sausage on both sides and the back. Season with your favorite bbq rub.
Start rolling up the bacon around the sausage to form a log and make sure the ends are tight and the seam of the bacon sits on the bottom of the log
Place the log in the grill and cook for about 1.5-2 hours until the internal temperature in middle is at least 165 degrees.
When done, slice the log in 1.5 inch pieces! Serve with butter milk biscuits and milk gravy and take a long nap.
