    Beef Short Ribs

    * Bone in Short Rib- 8 ea
    * Red Wine- ½ bottle
    * Madeira- 2 cups
    * Yellow Onions- 3 ea
    * Carrots- 5 ea
    * Celery- 1 bunch
    * Thyme- 1 bunch
    * Bayleaf- 5 ea
    * Peppercorns- 8 ea
    * Kosher Salt
    * Beef Stock- 1 gal


    Procedure-

    1. Chop all vegetables into 1 inch sections.
    2. Place ribs in shallow container and cover with vegetables, herbs, spices, and wines.
    3. Let set overnight.
    4. Remove ribs from liquid and pat dry.
    5. Season liberally with salt and pepper, and sear in roasting pot.
    6. When meat is fully browned, add marinating liquid.
    7. Reduce wine by half and add beef stock to cover.
    8. Bring to boil, and cover with parchment paper and foil.
    9. Bake in 325 degree oven for 3-4 hours.
    10. When fully tender, remove meat from pan, and stain liquid.
    11. Reduce liquid until it is thickened.
    12. Add meat back into liquid and serve.
