Beef Tataki with Sake Marinade and Sesame Daikon Salad
2- 8oz flat iron steaks
2oz olive oil
For marinade:
1 cup sake
1 cup mirin
1/2 cup ketchup
1 stick cinnamon
1 tsp garlic-chopped
1 tsp ginger-chopped
1 tsp coriander
1/2 cup soy sauce
1 Tbs honey
Put all ingredients into a small pot and bring to a boil.
Set aside and let cool
For the salad:
4oz daikon-julienned
2 oz daikon sprouts
2 0z shaved red onion
1 Tbs sesame oil
1 Tbs rice vinegar
1 Tbs peanut oil
Recipe
In a medium saute pan, heat oil and sear the steaks until golden brown.
Let cool. Once the steaks are cool, place in the marinade for up to 4
hours. The longer you can wait, the better.
In a small bowl mix all the ingredients together and set aside.
To plate the dish, slice the steaks as thinly as possible. fan out on a
plate and attractively arrange the salad on the top. Drizzle a little of
the marinade around on the dish.
