CARAMELIZED LAMB CHOPS (Sunday)

Preparation time: 10 minutes; marinating time: 30 minutes
Cooking time: 7 to 11 minutes; standing time: 5 minutes
1 1/2 tablespoons olive oil
1 1/2 tablespoons red wine vinegar
2 1/2 tablespoons dark brown sugar
2 teaspoons honey mustard
1 1/2 tablespoons fresh lemon juice
8 lamb shoulder shops (about 4 pounds)
Combine marinade ingredients; brush over all sides of the lamb. Cover and refrigerate 30 minutes. Drain any excess marinade. Grill lamb 7 to 11 minutes, turning often, for medium-rare to medium doneness. Transfer to a plate; cover and let stand 5 minutes before serving.
