"I'm not sure this exactly qualifies as a "marinade" as we think
of
them, but it sure makes for an amazingly delicious steak. The salt
has already been cut back in this recipe, but it's still quite
salty, so use your own judgment. I will say that cutting back on
the pepper or garlic practically ruins it flavor-wise, though."

Garlic and Pepper Paste for Steak
GARLIC & PEPPER PASTE FOR STEAK
2 Tbsp coarsely-ground black pepper
1 Tbsp kosher salt (or less)
8 large cloves garlic
1/4 cup olive oil
4 rib-eye steaks, 8 oz each, (approx 1 inch thick)
Recipe
Pour pepper, salt and garlic into food processor while running;
process until almost smooth. Add olive oil and mix well. Rub mixture
into both sides of each steak and place in shallow dish. Cover and
marinate in refrigerator overnight. Heat grill to high and cook
steaks about 7 minutes per side for medium doneness.
