    Ingredients
    1 Flank Steak (1.5-2 lbs)
    2T Pesto
    4C Packed Fresh Spinach
    1/4 c Grated Parmesan Cheese
    2T Toasted pine nuts (optional)
    Salt and Pepper to taste
    Olive Oil

    Instructions
    With a very sharp knife butterfly the steak with the grain, being careful to keep it as even as possible and leaving about 1/2 inch to hold the sides together.

    Place between two pieces of plastic wrap and pound to an even thickness. You are trying to make as even as possible, not too thin. Also be careful not to tear the steak.

    Season the inside with salt and pepper, and coat with the pesto.

    Saute the spinach and drain off the liquid and distribute it evenly across the steak.

    Sprinkle with Parmesan cheese then roll and tie the steak.

    Season the outside with salt and peeper and rub with olive oil.

    Sear the steak in a hot pan on all sides until well caramelized (about 4-6 minutes per side)
    then move to a 400 degree oven for 6-8 minutes for medium.

    Slice and serve on a sauce of your choice IE: Marinara, bordelaise, or even an Alfredo.
