    1 pound lean ground pork
    1 pound ground beef
    1 cup shredded Monterey Jack cheese
    1 cup plain dry bread crumbs
    1 cup thick and smooth taco sauce, divided
    2 eggs, beaten lightly
    1 tablespoon chopped fresh parsley
    2 teaspoons diced jalapeno peppers
    1 teaspoon garlic, minced finely
    1 teaspoon salt
    ¼ cup grated Cheddar cheese

    Recipe



    Heat oven to 350 degrees. Lightly spray 9-by-5-inch loaf pan with vegetable spray.

    In large bowl, combine pork, beef, cheese, bread crumbs, ½ cup taco sauce, eggs, parsley, garlic and salt; mix lightly but thoroughly with blending fork or table fork.

    Put in prepared pan and bake in preheated oven 55-60 minutes, spooning juices over top as meatloaf bakes and meat is cooked thoroughly. Drain of any excess fat or spoon over top of meat. Top with remaining taco sauce; sprinkle with cheese while meat is still hot.

    Makes 6 servings.
