    Pan Roasted Pork Tenderloin in Oktoberfest Beer

    Vinaigrette:

    1/2 cup vinegar
    1/4 cup oil
    1/4 cup Oktoberfest beer
    1/2 onion
    1 tbsp mustard
    1 tsp honey
    8 ounces mache (specialty lettuce)
    salt and pepper, to taste

    Chanterelles

    2 cups chanterelles (sliced)
    1 block of butter
    1 shallot
    parsley (chopped)
    chives (chopped)
    salt and pepper to taste

    Pork Tenderloin:

    3 cloves garlic
    1 cup mustard
    5 cups oil
    rosemary, thyme, salt and pepper to taste

    Preparation:

    Wash mache. Combine mustard, honey, vinegar, onion, beer and salt and pepper. Slowly add oil to emulsify.

    Preparation:

    Melt butter in a pan. Add chopped shallots and chanterelles and saute for two minutes.

    Add parsley, snipped chives and season with salt and pepper.

    Preparation:

    Marinate the pork tenderloin with mustard, garlic, rosemary, thyme, salt and pepper for two hours.

    Heat a pan and add the oil. Sear the pork on all sides and finish in the oven at 375-degrees for about six minutes or until pink.
