Spinach Meat Loaf

1 large egg white
1/4 cup evaporated skim milk
1 can tomato sauce
1 1/2 cups soft French breadcrumbs
1 small onion, finely chopped
1 large potato, scrubbed, grated
1 clove garlic, minced or pressed
2 teaspoons Dijon mustard
3/4 teaspoon dried oregano
1/4 teaspoon pepper
1 pound extra-lean ground beef
1 pound turkey breast, skinless, ground
1 package frozen chopped spinach, thawed and squeezed dry
1/4 cut Romano or Parmesan cheese, grated
1 tablespoon firmly packed brown sugar
1 tablespoon red wine vinegar
1 1/4 teaspoons Worcestershire sauce
Recipe
In a large nonmetal bowl, combine egg white, milk, and 1/2-cup tomato sauce; beat until well combined. Stir in breadcrumbs, onion, potato, garlic, mustard, oregano, and pepper. Add beef and turkey; mix lightly.
On a large sheet of plastic wrap, pat meat mixture into a 12-inch square. Distribute spinach over meat to within 1/2-inch of edges; sprinkle evenly with cheese.
Using plastic wrap to lift meat, roll up meat jellyroll style. Pinch seam and ends closed to seal in filling. Carefully place meat loaf, seam side down, in a shallow baking pan.
Preheat oven 350 degrees. Bake in oven for 1 1/4 hours.
In a small bowl, stir together sugar, vinegar, Worcestershire and remaining tomato sauce until well blended. Set aside.
Remove pan from oven; spoon out and discard any drippings. Spoon tomato sauce mixture over meat loaf. Return to oven and continue to bake until meat is well browned (15-20 minutes). With a wide spatula, carefully transfer meat loaf to a platter. Let stand for about 5 minutes before slicing. Serves 8.
