    Sweet and Spicy Taco Meatballs

    l lb. lean grown beef
    l/2 c. corn chips, crushed to about l/3 c.
    l packet of taco seasoning
    l egg, beaten
    l cup thick chunky salsa
    l/2 c. water
    l/4 c. peach preserves

    Recipe



    l. In a medium bowl, combine ground beef, crushed corn chips,
    onions, taco seasoning and egg; mix well. Shape mixture into l6 (l
    l/2 inch) meatballs.

    2. Spray large nonstick skillet with nonstick cooking spray. Add
    meatballs; cook over med-high heat until browned on all sides turning
    frequently. Drain if necessary.

    3. Add salsa, water and preserves. Reduce heat to med.-low; cover
    and cook l4 minutes or until meatballs are thoroughly cooked, stiring
    and turning meatballs occasionally.

    4 serving
