MICROWAVE BEEF TACOS AND FIXINS

1 lb. lean ground beef
1/2 c. chopped onion
1 clove garlic
1/2 c. tomato juice
1 (1 1/4 oz.) pkg. taco
seasoning mix
8 taco shells
2 c. shredded lettuce
2 medium tomatoes, chopped
1 1/2 c. shredded Cheddar
cheese
1 medium onion, finely chopped
1 avocado, diced
1 small can sliced black
olives, if desired
Recipe
Place beef in 2 quart microwave casserole; break up with
a fork. Add onion and garlic. Cook on Maximum Power for 4
minutes, or until beef is no longer red, stirring several times
during cooking time; drain. Stir in juice and taco seasoning.
Cook on Maximum Power for 3 minutes, or until heated through.
Arrange taco shells on microwave proof plate. Cook on
Maximum Power for 1 minute.
Divide beef mixture, lettuce, tomatoes, cheese, onion
and avocado among shells. If olives are used, place 2 or 3
slices on each taco. Serve with your favorite taco sauce.
Total cooking time: 8 minutes. Serves 8.
