6 Tbsp. margarine
1/3 c. slivered almonds
2 Tbsp. fresh squeezed lemon
juice
celery salt to taste
sprigs of parsley
4 to 6 sheepshead fillets,
skinned and boned (or other
fish of this texture)
Recipe
Place margarine and almonds in plate. Microwave on High
for 6 minutes or until nuts turn crunchy and brown. Remove
nuts with slotted spoon and reserve.
Add lemon juice, celery salt and parsley to butter in
plate; mix and dredge fillets in this liquid. Lay fillets flat
in plate with thicker portions to the outside. Cover with
plastic wrap and microwave on High 4 minutes. Remove plastic
wrap and ladle liquid over fish. Sprinkle with seasoning salt
and place nuts on top. Microwave for 2 additional minutes.
Serves 4.
