MICROWAVE PEANUT BRITTLE

1 c. raw Spanish peanuts
1 c. granulated sugar
1/2 c. white corn syrup
1/8 tsp. salt
1Tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Recipe
Stir peanuts, sugar, syrup and salt together in 2 quart
bowl. Microwave on Full power for 8 minutes, stirring twice
during cooking time. Add butter and vanilla. Microwave again
for 2 minutes. Peanuts will be lightly browned and the syrup
very hot. Add soda and stir gently until mixture is foamy and
starting to turn medium caramel color. Pour quickly onto a
well buttered cookie sheet. Spread thinly. When cool, break
into pieces and store in airtight container.
