    Foods cooked in the microwave need standing time to finish cooking properly. They have on-going cooking after the microwave shuts off. Skinless chicken pieces will also reduce fat content of this recipe.

    List of Ingredients




    Picante Chicken


    1 (3 pound) broiler-fryer chicken, rinsed and cut up
    1 thinly sliced lemon
    1 thinly sliced onion
    1/3 cup Picante Sauce
    1/2 cup catsup
    1 tablespoon soy sauce
    1 tablespoon brown sugar

    Recipe



    Place chicken in shallow microwave baking dish, meatiest pieces to the outside so they will receive more concentrated microwaves and cook more easily. Top with lemon and onion slices. Cook at 100% power for 10-12 minutes. While chicken is cooking, mix Picante, catsup, soy sauce and brown sugar. Drain liquids from chicken. Spoon sauce over chicken. Microwave, partially covered, for additional 10-15 minutes or until chicken is no longer pink. Let stand for 5 minutes before serving.
