Prosciutto and Egg Panini

# 8 large eggs
# 1/2 teaspoon kosher salt
# 1/4 teaspoon black pepper
# 2 tablespoons unsalted butter
# 4 soft sandwich buns, halved lengthwise
# 8 ounces prosciutto, thinly sliced
# 8 ounces swiss cheese, thinly sliced
1. 1 In a small bowl whisk together the eggs, salt, and pepper.
2. 2 Melt 1 tablespoon of the butter in a large nonstick skillet over medium heat.
3. 3 Pour in the eggs and scramble until cooked through.
4. 4 Divide the eggs among the bottom halves of the rolls.
5. 5 Add the prosciutto and cheese and sandwich with the tops of the rolls.
6. 6 Melt the remaining butter in a grill pan or large nonstick skillet over medium heat.
7. 7 Add half the sandwiches to the skillet.
8. 8 Cook, pressing frequently with the back of a spatula or placing another pan on top of the sandwiches to weigh them down, until the cheese has melted and the bread is golden, 4 to 6 minutes.
9. 9 Repeat with the remaining sandwiches.
