Passover Chocolate Caramel Matzo Squares

3 lightly salted matzo
12 tablespoons butter or margarine -- 3/4 cup
3/4 cup golden brown sugar
2 teaspoons water
2 ounces chopped semisweet chocolate -- 2 squares
1 cup finely chopped walnuts
Recipe
Position rack in center of oven; preheat oven to 350 degrees.
Put the matzo in an ungreased 10-1/2 x 15-1/2 inch rimmed baking
sheet (jelly-roll pan), arranging them to cover the bottom of the
pan, breaking them when necessary.
Combine the butter and brown sugar in a medium saucepan. Place over
medium heat until melted. Bring to a boil, then boil, stirring, for 4
to 5 minutes, until thickened. Remove from heat and carefully stir in
the water (the mixture will bubble). Add the chocolate and stir until
melted. Immediately pour over the matzo in the pan, spreading it to
cover. Sprinkle with nuts.
Bake for 10 minutes. Remove from oven and, using a large knife or
cleaver, cut the matzo into approximately 2-1/2 inch squares. Using a
spatula, remove the squares to a sheet of wax paper; let cool
completely. Store in an airtight container at room temperature.
Yields about 24. Per Square: 135 calories, 1 g protein, 12 g
carbohydrate, 10 g fat (4 g saturated), 16 mg cholesterol, 62 mg
sodium, 0 fiber.
