Cajun Shrimp Pasta

1 Tbsp. salad oil
2 tsp. roasted minced garlic
½ cup yellow onions diced
2 Tbsp. lemon juice
1 cup seafood or fish stock
1 Tbsp. blackening spice
¼ cup julienne tomatoes
3 whole basil leaves
pinch thyme leaves
½ cup heavy cream
8 oz. butter chips
1 cup shrimp, peeled & de-veined
1 Tbsp. thinly sliced green onions
sea salt
chili lime sauce
2 cups cooked penne pasta
½ cup provolone cheese
½ cup parmesan cheese
Method
· Pour the oil into a hot sauté pan. Add the garlic and yellow onions and sauté for one minute. Add the lemon juice and stock and simmer for one minute reducing the liquid a little bit.
· Add the shrimp, spice, tomatoes, basil and thyme and cream. Swirl the pan to mix the ingredients
· While swirling the pan constantly add the butter chips a few at a time until all is used
· Once the butter is added and melted add the green onions, chili sauce and pasta
· Swirl the pan the mix the ingredients together
· Add the cheese and swirl the pan until melted and gooey.
