Forget about your regular old spaghetti and meatballs! Spice up your pasta with this Herbed Linguine recipe from the Thanksgiving Point Emporium Kitchen!
Herbed Linguine

Ingredients:
1 lb. linguine, cooked al dente
2 Tbs. olive oil
1/2 c. red onion, chopped
2 cloves garlic, minced
1 c. chicken broth
2-3 Roma tomatoes, diced
3 Tbs. fresh parsley, chopped
1/2 tsp. salt
1/2 tsp. cracked black pepper
1/4 tsp. crushed red pepper
6-8 fresh basil leaves, chopped
2 Tbs. fresh thyme, chopped
Grated Parmesan cheese
Instructions:
Sauté onion in olive oil until tender (3-5 minutes) then stir in garlic and sauté one additional minute. Add chicken broth, Roma tomatoes, salt, pepper, crushed red pepper and 1 tablespoon of chopped parsley; let cook over medium heat for five minutes. Stir in cooked pasta, basil, thyme and the rest of the parsley and heat through. Remove from heat and top with shaved Parmesan cheese. Serve immediately.
