Etruscan Pasta
12 Jumbo gulf shrimp (6 per person)
1/4 cup olive oil
1/4 cup minced green onion
1 tsp minced garlic
2 Tbsp black olives, diced
2 Tbsp green olives, diced
1/2 cup artichoke hearts, quartered
1/2 cup sun dried tomatoes, reconstituted or packed in oil
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 cup white wine
Salt and pepper to taste
12 oz. cooked linguine pasta
Add olive oil to sauté pan, set on medium heat. Let oil come to temperature. Add shrimp and green onions, season with salt and pepper. Saute until shrimp are nearly done. Add garlic, olives, tomatoes, artichoke hearts, basil, oregano and white wine.
