Zucchini - large dice ¼ cup
Red Onion – thin strips¼ cup
Red Pepper – medium dice½ can
Artichoke hearts – cut into wedges1 tbsp
Balsamic Vinegar4 tbsp
Roasted Garlic OilTo taste
Salt & Pepper12 oz
Marinara Sauce – your favorite variety6 oz
Fresh Mozzarella – cut into ½ inch pieces2 – 3 Tbsp
Parmesan Cheese - shredded1 Tbsp

Cook pasta in salt water · In a sauté pan heat the skillet and add the garlic oilo Add mushrooms and begin to sautéo Add the red onions and zucchinio Add the balsamic vinegar and cook about 45 secondso Add the red pepper and artichokes o Add the marinara and simmer together until the sauce is hotOnce the marinara is hot add the cooked pasta and let simmer for 1 -2 minutesRemove from heat fold in the fresh mozzarella Place in a serving bowl or plates and sprinkle with parmesan cheese and parsley
