PASTA PRIMAVERA WITH CARAMELIZED ONIONS (Wednesday)
Makes 5 servings
Preparation time: 15 minutes
Cooking time: less than 30 minutes, plus pasta
8 ounces penne pasta (see Note)
2 tablespoons olive oil
2 medium onions, halved and thinly sliced
1 medium sliced red bell pepper (1/4-inch strips)
1 small sliced green bell pepper (1/4-inch strips)
2 large (7 inches long) zucchini, halved lengthwise and sliced 1/4 inch thick
1/3 cup basil pesto sauce (see Note)
1/4 cup freshly grated parmesan cheese
Cook pasta according to directions; drain. Meanwhile, heat oil in a large nonstick skillet on medium-low. Add onions; cook 15 minutes or until golden. Add both peppers and zucchini; cook 8 to 10 minutes or until softened. Return cooked pasta to pan; add vegetables and pesto sauce to pasta and toss gently to coat. Spoon into bowls and sprinkle cheese on top.
Note: For testing purposes, I used Dreamfields Healthy Carb Living pasta and Classico Traditional Basil Pesto.
